directions:

  1. cook quinoa according package directions. 3. dice all veggies. 3/4 cup bell peppers. 1/3 cup red onion. 1/3 cup spinach or kale. in a separate bowl, scramble 4 eggs.
  4. to your 2 cups cooled quinoa, add: 4 eggs, all veggies, 1 cup sharp cheddar cheese, 2 tablespoons parmesan cheese, 1 1/3 cup cooked breakfast sausage, and a pinch of salt & pepper. stir everything together!
  5. spoon quinoa & sausage mixture into mini muffin tin. place in oven for 18-20 mins [or until golden brown on the edges].
